Paneer pulao is fast emerging as a formidable alternative to the customary mutton or chicken variants gracing Bengali festive tables, offering a delicately spiced, wholesome dish that marries fragrant basmati rice with golden-fried paneer, cashews and raisins to consummate effect.

No Bengali family celebration, invitation or special luncheon is deemed complete without the presence of pulao, a dish long synonymous with mutton or chicken. Paneer pulao, however, has carved out a niche of its own as a compelling vegetarian alternative, its appeal resting on the harmonious interplay of aromatic basmati rice, ghee-fried paneer cubes and a scattering of cashews and raisins that lend the dish both visual allure and depth of flavour.

Beyond its aesthetic appeal, the dish is prized for its nutritional value and palatability alike; being lightly spiced, it is easily digestible and consequently suited to diners across the age spectrum, from young children to the elderly.
